Puff Pastry to the Rescue!
I have to admit I was going to take a very different approach to building the shells for these, but I found myself pressed for time and realized, as I often do, that I like to keep extra puff pastry sheets in my freezer.
The filling/base came out a little rougher-looking than I’d envisioned, but was still very tasty. I whipped some heavy cream and added some sugar-free white chocolate pudding mix for stability, flavor and texture. I’d probably add less next time as the finished product was pretty stiff and inelegant to glom into the pastry shells.
