Fireworks Cake

I got a “special request” from my cousin for this cool thing she saw online:

My heart sank at first – I like things way more challenging than this – but I decided to give it  a go, with a couple of key change-ups.

Because I just can’t leave well enough alone, I used a red velvet recipe for the cake (having previously noted the “red” part of that recipe is purely arbitrary anyway) and a corresponding cream cheese glaze for the top.

The red, white and blue spatulae were entirely accidental.

It’s important to note that the baking time on my red velvet recipe was totally skewed by going from the several layers the recipe was designed for to a single, dense bundt. I kept adding 10 minutes, and probably more than doubled the cooking time in the end.

I’m glad I did it. Most of the fancier cakes, I honestly barely want to look at again much less taste, but this was *really yummy* and I was not disappointed to be able to take some home with me.

Almost as importantly,  the experience has given me some ideas for future projects.
